The new year was in sight. I had the urge to shake things up. But vegan? Really?
Blame it on the Daily Oklahoman. They ran an inspiring article about a guy who changes his life by going on a vegan diet. Then "Forks over Knives" on Netflix sent me on over to the green side.
But would I do this alone...oh no, I talked the whole female half of the lab into participating. I lured them with the thoughts of it being a scientific experiment. Lab people love this.
On to my husband. I think he is just tired of seeing my get a little chubbier each year so, he immediately bought in. We're not mentioning it to our son and we'll see how long it takes him to notice.
This takes some research. Is it bad that I get kinda queasy just reading vegan recipes?
I decided to go simple. Not reinvent the wheel. Soups, salad, pitas and beans, beans and more beans.
Day one: B: toast with peanut butter. Coffee. L: Corn torilla with carmelized onions, wholey guacamole, and black beans seasoned with chile powder, cumin and chipotle pepper. Topped with homemade salsa.
